I’m late (again) with my menu post. I need to come up with a better way to get this thing up on time…otherwise it’s no fun because the week is half over. Or many I just need to eliminate the menu post all together? Who knows…but this does require some kind of remedy.

I always find myself talking about weather in these posts…but it seems like a logical explanation based on what’s going on in our kitchen, I suppose. Weather has been absolutely crazy around here lately. We get one or two days of beautiful sunshine and temps in the mid-60s, then one or two days of cloudy coldness (and SNOW for God’s sake). For anyone who knows what it’s like to live in New Mexico, this is quite normal behavior, but it’s still annoying. We’re pretending spring is here to stay though, so the grill is working full-swing these days.

Here’s what we’ve got going on this week:
– Ribs with Corn and Mashed Potatoes (this is a carry over from last week that was never made, shame on us)
– Sausage, Pepper and Onion Kabobs
– Pasta with Saffron, Seafood and Cream with Salad and Bread
– Pork Schnitzle with Spaetzle and Baked Fennel
Chicken with Saffron Cream Sauce with Rice and Cauliflower
– Cajun Jambalaya

We’ve got quite the array of foods this week, a little of the same and a little something different. It should be a good blogging week, as long as I can keep up! So, until next time, happy eating! Ciao.

It’s hard to believe that spring is (finally) here and St. Patrick’s Day is literally days away. Weather has been crazy here lately. Over the weekend we went from temperatures in the mid-60s to snow all day on Sunday. Regardless, spring is here and hopefully the weather will start to reflect that.

This year we’re giving corned beef and cabbage a shot on our own — we usually just throw a munch on my mom’s whenever she makes it. We don’t have the time to try corning our own beef this year, but we did spend a lot of time looking for the perfect recipe, so we’re hoping it turns out delicious!

Here’s what else we have going this week:
– Shrimp and Scallop Pasta
– Roast Chicken with Roasted Parsnips, Potatoes and Brussels Sprouts
– Fish, Chips and Fried Okra
– Ribs with Mashed Potatoes and Corn (helllllooooo summer)
– Corned Beef and Cabbage with Potatoes, Celery and Irish Soda Bread

I’ve never had soda bread before, but Billy decided he’s going to give it a shot this year. Other than that, dinner this week is pretty standard, but hopefully not boring! Until next time, happy eating! Ciao.

I’m a day late…but at least this time I have an excuse. (The hand, remember? Sheesh.) In the days following my big kitchen disaster, Billy and I have continued cooking together in the kitchen, only now we make it known when there’s a hot pan/dish/other kitchen item out. It’s also been pretty awesome because Billy has taken over all of the dish cleaning duties since my stupid hand can’t get wet. I can’t complain too much about that, right?

This week is a short cooking week for us because we’ve got family coming in to town and we’re also going out for Albuquerque’s first ever restaurant week (which I hope to post about early next week). Nevertheless, we’ve got some pretty awesome meals this week.

Here’s what we’ve got going this week:
– Cioppino-Style Salmon over Angel Hair Pasta
– Mongolian Beef with Veggie Egg Rolls and Rice
– Pasta with Green Beans and Goat Cheese
Baked “Fried” Chicken with Fried Okra and Potato au Gratin
– Enchiladas with Papitos

This week is the first time ever that I’m trying my mom’s enchiladas (which happens to be one of my favorite comfort foods). I know they won’t be the same, but I’m hoping we can at least get close. So, until next time, happy eating! Ciao.

A few weeks ago, Billy and I made a decision that we were going to limit ourselves to eating out once per week and once per weekend (in other words, twice a week). While this isn’t a huge challenge for us, we do enjoy eating out on weekends while we’re out an about. Despite that, we’ve been on a roll lately with the home cooking, and I think it’s forcing us to try a lot of new recipes that we’re totally falling in love with!

We had to adjust a few things on last week’s menu because Billy’s mom ended up coming down for a short weekend, so we wanted to make something special while she was here. So, this week we have a recycled recipe or two to try out.

Here’s what we’ve got going this week:
– Grilled Pork Tenderloin with Spaghetti Squash and Sauteed Cabbage
– Pasta with Green Beans and Goat Cheese
– Curry Lime Chicken Wings with Grilled Zucchini and Potatoes
– Rack of Lamb with Sauteed Vegetables and Quinoa
– Teriyaki Hens with Crab Spring Rolls and Rice

We’ve made veggie spring rolls before, but never anything with meat so we’re really excited to try Gordon Ramsay’s crab rolls. The weather is supposed to be awesome here in the coming days, so we’re also doing a few things out on the grill. It’s shaping up to be another week of food adventures! Until next time, happy eating. I realized like mid to late week last week that I totally didn’t post a menu. I need to set up a reminder for this post or something, because it’s easily forgotten. We did have some pretty amazing meals last week though, some of which have made it to the blog already. Those that haven’t will be posted shortly!

We have a lot of pretty simple (but delicious, nonetheless) stuff going on this week because my procrastinator self put off this month’s Daring Bakers Challenge until the last minute. SO not a good idea. I’m hoping everything goes smooth, but I might be one cranky baker by the end of the week!

Here’s what we’ve got going this week:
– Garlic Chicken Stir Fry
– Fish Tacos with Chipotle Mayo and Rice
– Steak Kabobs with Quinoa
– Pasta with Salad and Bread
Asian Salmon with Carrots and Leeks and Rice
– Roasted Pork with Spaghetti Squash and Sauteed Cabbage
– Grilled Bratwurst with Sauteed Onions and Pasta Salad

If you can’t tell (maybe the kabobs and brats gave it away?), we’re anxious for summer! We had a teaser of a week last week in terms of weather. The warm, sunny days were short-lived — it’s been dark and rainy here all day today. Oh well, our grill needs some love! Until next time, happy eating. Ciao!

Tip of the day: don’t ever think to yourself, “Wow, I haven’t been sick in a while.” It will come back to bite you.

That said, we have some repeats going on this week because Billy and I both ended up sick last week and over the weekend, so we didn’t get to try some of the new things we were hoping to try last week. We also ended up having to cancel our Super Bowl party, which was really a bummer. So, we’re just counting on this week to end up much better.

Last week was a great week for food (well, other than the disaster known as bearnaise sauce). It felt really good to get back on track with nightly meals at home, and it felt good knowing we we’re finally back to eating healthy for a while. This is another week full of great meals, old and new, and I’m looking forward to sharing it with you all!

– Steaks with Mashed Potatoes and Asparagus

I think this is probably one of the first “normal” weeks we’ve had since the holidays. Between all the different holiday celebrations we had going on, our trip to Durango and Billy’s birthday, it seemed each week our menu was getting smaller and smaller. Hopefully this week will be the start to a regular routine again!

We’re trying a few new things this week and sticking with a few old standbys. I spent a good part of the weekend looking through some cookbooks that have just been sitting on the shelf as of late, and it really got me back into the “let’s try new stuff” mode. Starting today I have no more excuses for my lack of blogging anymore! Last week/weekend we took a short trip up to Durango, CO for some family time, fun in the snow and great food. We had a total blast, ate way too much and were sad to return home…but here I am, back to my computer. I’ve actually really missed blogging. Ever since the holidays I’ve really been slacking, and I promise (to you, and to myself) that I’m back for good!

This week is Billy’s birthday (happy birthday, babes!), so we’ve got a short menu due to all the celebrating we’ll be doing.

– Chicken Wings with Sweet Potato Fries and Mixed Veggies
– Ribs with Mashed Potatoes and Brussels Sprouts
– Chicken, Rice and Cauliflower (one of my all time favorite Arabic dishes)

I’m a day late…and it’s been like a month since I last posted a menu! Things have been crazy since the holiday season started. I think I did more baking in the month of December than I’ve done my whole life. It was a lot of fun, though, and we made some great memories. After two weeks away from work and a week away from home, I’m ready to get back on a regular schedule.

Here’s what we’ve got going this week:
– Pork Tenderloin with Apples, Potatoes and Green Beans
– Fettuccine Alfredo (hopefully with homemade fettuccine)
Chicken Tikka Masala with Cauliflower Rice
– Salmon en Papillote (some awesome-looking French thing) with Asparagus and Rice
– Tacos

We’re also pumped to try our hand at making flour tortillas — from scratch! Hopefully this year will be a great year for more cooking, baking and blogging!
